🥪 Creamed Chipped Beef on Toast
Also known as “S.O.S.” (popular in the U.S. military), this is a classic comfort-food dish made with dried beef in a creamy white sauce served over toast.
🛒 Ingredients (Serves 4)
- 8 oz dried beef (usually sold in jars or packets), sliced into strips
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 3 cups milk (whole milk preferred)
- ½ tsp black pepper (or to taste)
- Pinch of cayenne (optional)
- 6–8 slices toasted bread

- Prepare the beef
- If the dried beef is very salty, rinse it briefly under cold water and pat dry.
- Slice into bite-sized strips.
- Make the roux
- Melt butter in a skillet over medium heat.
- Whisk in flour and cook for about 1–2 minutes (do not brown).
- Add milk
- Slowly whisk in milk, stirring constantly to avoid lumps.
- Simmer until thickened (about 3–5 minutes).
- Add beef & season
- Stir in sliced beef and pepper.
- Cook another 2–3 minutes until heated through.
- Taste before adding salt—the beef is usually salty enough.
- Serve
- Spoon generously over toasted bread.
- Optional: sprinkle with parsley or paprika.
