A simple, budget-friendly dish that’s filling, protein-rich, and great for breakfast or a light meal. It combines a soft egg omelette with a lightly spiced cabbage filling, rolled into wraps.
Ingredients (serves 2–3)
For the omelette:
- 4 eggs
- 2 tablespoons milk (optional, for softness)
- Salt to taste
- 1/4 teaspoon black pepper
- 1 tablespoon oil or butter
For the cabbage filling:
- 2 cups cabbage (finely shredded)
- 1 small onion (thinly sliced)
- 1 green chili (finely chopped, optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red chili flakes
- 1/2 teaspoon turmeric (optional)
- 1 tablespoon oil
Optional additions:
- Grated carrot
- Capsicum (bell pepper)
- Soy sauce (for a slight Indo-Chinese twist)
- Shredded chicken or cheese
Step-by-step directions
Step 1: Prepare the filling
Heat oil in a pan over medium heat.
Add sliced onion and sauté until slightly soft.
Step 2: Cook the cabbage
Add shredded cabbage and green chili. Stir-fry for 3–5 minutes until slightly tender but still crunchy.
Add salt, black pepper, chili flakes, and turmeric. Mix well and cook for another 1–2 minutes.
Turn off heat and set aside.
Step 3: Prepare the egg mixture
In a bowl, beat eggs with milk, salt, and black pepper until smooth.
Step 4: Make the omelette
Heat a non-stick pan and add a little oil or butter.
Pour a thin layer of egg mixture and spread evenly like a crepe.
Cook on low-medium heat until set, then flip gently and cook the other side briefly.
Step 5: Add filling and roll
Place a portion of the cabbage filling along one side of the omelette.
Roll it tightly like a wrap or spring roll.
Step 6: Repeat
Repeat the process with remaining egg mixture and filling.
Step 7: Serve
Serve hot. You can slice the rolls into smaller pieces or keep them whole.
