👩🍳 Instructions
1️⃣ Cook the Pasta
-
Boil linguine in salted water according to package directions.
-
Reserve ½ cup pasta water before draining. Set aside.
2️⃣ Prepare the Chicken
-
Season chicken with salt, pepper, paprika, and Italian seasoning.
-
Heat olive oil in a large skillet over medium-high heat.
-
Sear chicken 4–5 minutes per side until golden and cooked through (165°F / 74°C internal temp).
-
Reduce heat, add butter and minced garlic.
-
Spoon melted garlic butter over chicken for 1–2 minutes.
-
Remove chicken and let rest before slicing.
3️⃣ Make the Alfredo Sauce
-
In the same skillet, melt butter over medium heat.
-
Add garlic and sauté 30 seconds until fragrant.
-
Pour in heavy cream and simmer 3–5 minutes until slightly thickened.
-
Stir in Parmesan (and mozzarella if using).
-
Season with salt, pepper, and nutmeg.
-
If sauce is too thick, add reserved pasta water a little at a time.
4️⃣ Combine
-
Toss drained linguine into the Alfredo sauce.
-
Slice chicken and place on top.
-
Garnish with parsley and extra Parmesan.
🔥 Pro Tips
-
Use freshly grated Parmesan for the smoothest sauce.
-
Don’t boil the sauce after adding cheese — it can separate.
-
Add spinach or sun-dried tomatoes for a flavor twist.
-
Want heat? Sprinkle in red pepper flakes.
