These are similar to the famous bites from Starbucks but homemade, healthier, and very high in protein. Perfect for breakfast meal prep or a quick snack.
π§Ύ Ingredients (Makes ~9β12 bites)
- 6 large eggs
- Β½ cup cottage cheese (adds protein and creaminess)
- Β½ cup shredded cheese (cheddar or mozzarella)
- 1 cup broccoli florets, finely chopped
- ΒΌ tsp salt
- ΒΌ tsp black pepper
- ΒΌ tsp garlic powder (optional)
- 1 tbsp milk (optional for softer texture)

- Preheat oven
Preheat oven to 180Β°C (350Β°F). Grease a muffin tin or use silicone molds. - Cook the broccoli
Lightly steam or microwave chopped broccoli for 1β2 minutes so it softens. - Blend the egg mixture
In a blender combine:- eggs
- cottage cheese
- milk
- salt & pepper
Blend until smooth.
- Assemble
Place broccoli evenly into muffin cups.
Pour egg mixture on top and sprinkle shredded cheese. - Bake
Bake for 18β22 minutes until set in the center. - Cool slightly
Let them cool for 5 minutes before removing.
