Old South Coca-Cola Pork Loin
A classic Southern-style roast where pork is slow-baked in a sweet, tangy cola glaze until tender, juicy, and slightly caramelized.
🧾 Ingredients
- 1.5–2 kg pork loin (or pork roast)
- 1 can/bottle Coca-Cola (about 330–500 ml)
- 1 cup brown sugar
- 3–4 garlic cloves (minced)
- 1 onion (sliced)
- 2 tbsp soy sauce or Worcestershire sauce
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp mustard (optional, for depth)
- 2 tbsp oil
🔥 Instructions
1. Sear the pork
- Preheat oven to 180°C (350°F)
- Heat oil in a pan
- Sear pork loin on all sides until golden brown

2. Build the glaze

- Remove foil
- Bake another 20–30 minutes
- Spoon sauce over pork so it becomes sticky and glossy
5. Rest & slice
- Let rest 10–15 minutes
- Slice thickly and serve with sauce
